Pone is a dessert that can be found in several Caribbean countries, with each having its own unique blend of ingredients and versions/interpretations. Trini pone is made of cassava (yuca), pumpkin (if you like), coconut and various spices. People who have never had it before mistakenly think that it would be either savory, weird tasting, or some odd attempt at a dessert due to the cassava. I have found that emphasizing the coconut and mentioning the cassava and pumpkin in passing, tends to eliminate hesitancy in purchasing it. Either that, or just giving out samples. Depending on your fancy, you can add a little, a lot or eliminate the pumpkin. The one I grew up on, had either little or no pumpkin. This makes it firmer…still delicious, just different. As an adult, for me pumpkin is a must, and yes lots of it. This makes it gooey and somewhat pudding like. This version is becoming more and more popular. I go to the extreme with this, but that’s how I like it.
